

This Kimchee pancake could be found in the appetisers section of many Korean restaurants worldwide. Kimchee's tangy spicy flavour makes this pancake really delicious, and it's really easy to make!

Ingredients:
250g (2-4 people) Kimchee Pancake Mix (or Korean Pancake Mix)

Kimchee (however much you like to put into the pancake)
425ml Water
A handful Spring Onion
1-1.5 tbsp Vegetable oil
1 tsp Sesame seed oil (optional)
For sauce:
1 tbsp Kikkoman (Japanese) soy sauce or Korean soy sauce
0.5 tbsp Cidar vinegar (white vinegar)
A pinch Sesame seeds (optional)
Method:
- Pour the pancake mix (powder) into a large mixing bowl
- Add in the water gradually, and mix until there are no more lumps
- Put in the Kimchee (chopped so the largest pieces are no larger than 1.5 inches in diametre) and mix.
- Add in some pieces of thin pork slices if you wish to do so
- Cut the spring onion into 1-1.5 inch strips, and mix them into the pancake mixture

- Using, preferrably a non-stick pan, put in 1-1.5 tablespoons of vegetable oil (add more if the pancake doesn't slide about the bottom of the pan easily) and the sesame seed oil (makes it more fragrant) and heat
- Pour in enough pancake mix until it is the desired size, and pan fry for about 5 minutes each (you will probably make around 3 pancakes), or until both sides are golden brown and a little crispy

- Serve. Dip into sauce before eating for a more flavourful experience =)
